Renaissance artists loved to paint it looking delicate and pious, usually hovering gracefully in the margins of some illuminated manuscript. What they conveniently left out is that this plant is a total nitrogen-junkie. It absolutely loves a good medieval dung heap. It thrives on neglect, trampled verges, and heavily disturbed earth.
The Romans practically worshipped it. Pliny the Elder, who rarely understated anything in his life, boldly proclaimed that swallowing a single spoonful of mallow juice every day would make you completely immune to all human diseases. A ridiculous claim, obviously. But you can understand his enthusiasm. The entire plant is loaded with mucilage. It is profoundly, undeniably slimy. Ancient apothecaries boiled the roots to cure toothaches and shoved the leaves into barley soup to soothe sore throats. And the little seed pods look so much like miniature wheels of Gouda that hungry children have spent the last two thousand years eating them straight off the stem. "Cheese weed," the English call it.
