Galangal Root: The Apothecary's Medieval Recipe Notebook

Galangal Root: The Apothecary's Medieval Recipe Notebook

Look at that rhizome. That knotty, pale-fleshed subterranean stem of Alpinia galanga. Most modern cooks wouldn't know what to do with it, but drop this onto a kitchen table in fourteenth-century Europe and watch the absolute frenzy. They called it galingale. The physicians of the era were thoroughly obsessed with Galen’s humoral theory and classified this particular root as uniquely "hot and wet." Hildegard of Bingen, a mystic twelfth-century abbess who definitely knew her way around an apothecary garden, prescribed this exact plant for everything from chronic back pain to terrible breath. It was the undeniable rockstar of the Zingiberaceae family. Ordinary ginger is a wallflower by comparison. Galangal hits your tongue with a sharp, piney, almost medicinal citrus crackle. It was the mandatory secret weapon in hippocras, the heavily spiced wine that fuelled every respectable medieval banquet. This recipe book puts that formidable piece of botanical history right on the cover. The vintage illustration captures the stiff, lanceolate leaves, the delicate orchid-like flowers, and the creeping rhizome in precise, obsessive detail. I absolutely loathe the sanitized, pastel florals you usually see on kitchen stationery. A real kitchen is a laboratory of roots, pungent resins, and crushed stems. Store your own culinary experiments inside. Fill the pages with heavy stews, sharp reductions, or whatever fiery concoctions you're pulling out of the ground. The binding is tough enough to survive flour spills and greasy thumbs. Real cooking is a messy, deeply aromatic business. Let the cover show it.

Although the product is what I expected (it's a notebook), the packaging for delivery was done poorly, and the notebook arrived bent, enough so that I am not comfortable giving it as the gift it was intended to be. The quality of the picture and design is lovely, but again, because it arrived bent, it is rather skewed.

This journal came in within a week of ordering it and I was thrilled! I love roses so I love having this journal. The size is perfect. Small enough to throw in a bag. The printing is clear. The pages are nice and thick. The binding is sturdy. The printing is a little darker than the photo on screen but that is expected with printing. It looks luxurious to me. I love deep red roses.
