Baja California Mexico Fish Tacos Postcard

Baja California, especially the northern state of Baja California and the southern Baja California Sur region, is famous for its fresh, bold, and seafood-centric cuisine, often influenced by its coastal geography and Mexican culinary traditions. One of its most iconic dishes is the Baja-style fish taco, typically made with battered or grilled white fish, cabbage, creamy sauce, and a squeeze of lime, often served in a soft corn tortilla. The region is also known for ceviche, fresh seafood marinated in lime juice with onions, tomatoes, and cilantro, reflecting the abundant marine life of the Sea of Cortez and Pacific coast. Beyond seafood, Baja California is celebrated for Mexican-style gourmet cuisine, especially in Ensenada, which has become a hub for the “Baja Med” movement—an inventive fusion of Mexican, Mediterranean, and Asian flavours.
